Vegetarian Nachos

Ingredients
1-15 ounce can black beans, low sodium, drained 1 large bell pepper (any color), diced 1 large onion, diced 2 Diced Zucchini 2 Diced yellow squash 1 diced jalapeno or serrano 2 tbsp salsa (of your choice) 1 tbsp cumin 1 tbsp chili powder 1 tbsp dried or 3 tbsp fresh cilantro (finely chopped) pinch of salt Non-stick cooking spray 1/2 cup grated pepper jack cheese
Preparation
Saute all peppers in non-stick spray for 3 minutes. Add onions and other veggies; saute 3 more minutes. Add black beans, salsa, and spices, and cook for 5 minutes. Transfer to baking dish, and sprinkle with cheese. Bake in 350 degree oven or toaster oven until cheese is bubbly.
Serve over chips with salsa, sour cream or guacamole (optional)
